Rock sugar indeed
This was exactly as advertised, a bag full of rock sugar. The crystals are incredibly consistent in size, so it's great if you're going for a uniform look. Using a little bit of water or vodka to fuse them together into larger crystals wasn't too difficult either (vodka was aired off and didn't leave a taste). I used these on a geode cake and they took the food colouring okay, but I don't blame the sugar.
